Benefits of Sourdough
Sourdough is the oldest form of leavened bread. There are many benefits of using a sourdough starter in your baking. It makes the baked good easier to digest due to the enzymes in the flour breaking down and reducing the gluten content which in effect, the bread (or other baked good) has a lower glycemic index than regular bread. It also includes prebiotics and probiotics which are important for a heathy gut. It is found to be high in acids, particularly lactic acid which helps the absorption of minerals and acetic acid which naturally prevents the formation of mold.
